Nonna’s Tips for Cooking Pasta Bake

Nonna always says the best pasta bakes are all about balance: pasta cooked just shy of done, a sauce a little looser than you think it needs, and a hot oven to turn the top golden and bubbling. Get those three right, and you’ll have a pasta bake that’s rich, comforting and packed with flavour every time.

There’s a reason pasta bake is a favourite on Nonna’s family table when everyone comes together. Pasta bakes are simple, generous and comforting. From a quick midweek Italian-style tuna pasta bake to a comforting gnocchi and turkey bake, a great pasta bake transforms a handful of Italian staples into something truly delicious.

Here are Nonna’s tips for getting your pasta bakes right every time.

Nonna’s Tip 1: Choose a Pasta Shape That Holds Sauce

Not every pasta shape was made for a pasta bake. Nonna reaches for tubular pasta every time, because the hollow centre lets sauce bubble inside the pasta, as well as coat the outside.

  • Rigatoni is Nonna’s go-to for rich, hearty pasta bakes
  • Penne works beautifully with creamy or cheesy sauces
  • Macaroni is perfect for smaller, lighter pasta bakes

Long-strand pasta, like spaghetti and linguine, is better saved for the hob. Discover more about how Nonna uses different pasta shapes later.

Nonna’s Tip 2: Take the Pasta Out Of The Pan Early

This is the tip Nonna says makes the biggest difference. Your pasta keeps cooking in the oven, so boil it for around two minutes less than the packet says.

It should still have a firm bite when you drain it. By the time your pasta bake comes out of the oven, it will be perfectly tender, never soft or soggy.

Nonna’s Tip 3: Make the Sauce a Little Looser

Pasta soaks up liquid as it bakes, so a sauce that looks just right in the pan can dry out in the dish. Nonna makes her pasta bake sauce slightly looser than she would for a bowl of pasta.

Rich polpa tomatoes or chopped tomatoes make a wonderful base for many pasta bakes, such as meatball rigatoni. Let the sauce simmer gently first so the flavour deepens, then loosen it with a splash of starchy pasta water before it goes in the oven.

Nonna’s golden rule: always save a cup of pasta water before draining. It’s the secret ingredient many home cooks forget. Find more tips for cooking pasta here.

Nonna’s Tip 4: Mix Everything Before It Goes In

Nonna never layers dry pasta with sauce and hopes for the best. She tips the drained pasta straight into the sauce, stirs until every piece is coated, then spoons it into the dish.

It means every bite is packed with flavour, from the first forkful to the last.

Nonna’s Tip 5: Use Two Cheeses

For the perfect golden topping, Nonna always relies on two cheeses, each with their own role to play:

  • Mozzarella for that stretchy, melting centre
  • Parmigiano-Reggiano for a golden, savoury crust

Tear the mozzarella by hand and pat it dry first, so it melts without making the top watery. Finish with a drizzle of olive oil before baking.

Nonna’s Tip 6: Bake Hot, Then Let It Rest

A pasta bake needs a hot oven, around 200°C (180°C fan), until the edges are bubbling and the top is golden. Every recipe is a little different, so follow the timings on yours.

Then comes the hard part: waiting. Nonna lets her pasta bake rest for five to ten minutes before serving. The sauce settles, the cheese sets slightly, and it cuts into neat, generous portions.

Nonna’s Tip 7: Keep It Simple

Like the best Italian cooking, great pasta bakes are all about a few quality ingredients, prepared well. Good Italian tomatoes and pasta, a little garlic, fresh basil and a generous handful of cheese are all Nonna needs.

If you’d like to add more, choose one or two hero ingredients and let them do the talking, like sausage in this Tomato Sausage Rigatoni or a hearty Rigatoni Con Carne.
