Method:

  1. Heat the Napolina Olive Oil in a large pan over medium heat. Add the onion and carrot and cook until softened. Stir in the Napolina Polpa Tomatoes and season with salt and pepper. Add the Napolina Chilli & Garlic Flavour Booster and mix well.
  2. Blend the sauce until smooth, then return it to the pan. Add the rice and gradually pour in the vegetable stock, stirring regularly, until the rice is cooked and al dente. Remove from the heat and leave to cool completely.
  3. In a bowl, combine the panko breadcrumbs and grated pecorino, mix together with your hands.
  4. Take a handful of the cooled risotto and flatten it in the palm of your hand. Place a piece of mozzarella in the centre, then carefully wrap the rice around it, sealing well and shaping into an oval ball. Repeat with the remaining mixture.
  5. Coat each supplì in the flour, then the beaten egg, and finally the pecorino breadcrumb mixture.
  6. Heat the vegetable oil for deep frying. Fry the supplì for around 4 minutes, or until deep golden brown and crisp.
  7. Remove with a slotted spoon and drain on kitchen paper for a few minutes before serving. Buon appetito! Bellissimo!
