Method:
- Heat 1 tbsp Napolina Olive Oil in a large pan over a medium heat. Add the chicken, smoked paprika and a pinch of salt and black pepper, then cook until lightly golden on all sides. Remove from the pan and set aside.
- Using the same pan, add the shallots, courgette and sun-dried tomatoes. Cook for a few minutes until softened and fragrant, then stir through the Napolina Orzo and toast for a further minute.
- Pour in the Napolina Chopped Tomatoes, a squeeze of Napolina Roasted Herbs & Garlic Flavour Booster and the chicken stock. Stir well to combine and bring to a gentle simmer.
- Fold in the spinach, black olives, tomatoes and crème fraîche until evenly combined. Return the chicken to the pan, then scatter over a handful of fresh basil leaves and the torn mozzarella.
- Transfer to a preheated oven at 200°C and bake for 15–20 minutes, until the orzo is al dente and the top is golden, bubbling and beautifully melted.

- 130g Napolina Orzo
- 1 tin Napolina Chopped Tomatoes
- 1 tbsp Napolina Roasted Herbs & Garlic Flavour Booster
- 200ml hot chicken stock
- 1 medium shallot, finely diced
- 2 large handfuls fresh baby spinach
- 1 medium courgette, diced
- 40g sun-dried tomatoes, chopped
- A handful of black olives, pitted and halved
- A handful of baby plum tomatoes, halved
- 2 tbsp crème fraîche
- 50g fresh mozzarella, torn
- 1 tbsp olive oil
- 1 tsp smoked paprika
- Salt and freshly ground black pepper
