Pesto Casarecce with Burrata, Blistered Cherry Tomatoes & Pine Nuts

Method:
- In a frying pan over a medium-high heat, warm the Napolina Roasted Garlic & Herbs Flavoured Olive Oil. Add the cherry tomatoes on the vine and cook for around 5 minutes, until blistered and softened, then set aside.
- Using the same pan, add the basil pesto, a ladle of reserved pasta water and the Parmigiano Reggiano. Stir together for 1 minute until silky and combined, then add the cooked Napolina Casarecce and gently toss to coat.
- Divide between bowls and top with the burrata, blistered vine tomatoes and toasted pine nuts. Finish with extra Parmigiano Reggiano, fresh basil leaves and a twist of black pepper. Buon appetito!

- 200g Napolina Casarecce, cooked according to pack instructions
- 2 tbsp basil pesto
- 1 burrata
- 2 vines of cherry tomatoes, left on the vine
- 30g Parmigiano Reggiano, plus extra for serving
- 1 tbsp Napolina Roasted Garlic & Herbs Flavoured Olive Oil
- Handful of pine nuts, toasted
- Fresh basil leaves, to serve
- Salt and black pepper, to taste
