Penne alla Sorrentina

Method:

  1. In a pan of boiling salted water add the Napolina Penne Pasta and cook until al dente, following package instructions then drain leaving a ladle of pasta water aside.
  2. In a skillet over a medium heat, add the olive oil and garlic and fry for 1-2 minutes until fragrant.
  3. Pour in the Napolina Passata then season with salt and pepper to your liking, and let it simmer for 10 minutes, stirring occasionally until it thickens slightly.
  4. Add the cooked Napolina Penne pasta back into the skillet and toss together until all combined. If the sauce is too thick, add a little of the reserved pasta water to loosen it up
  5. Then add in the mozzarella and Parmesan cheese and fold in gently.
  6. Sprinkle a little extra parmesan over the top and add a few torn basil leaves then bake in the oven at 200ºC for 8 min until the mozzarella is melted and bubbly then serve immediately with a little extra torn basil and enjoy!

  • 200g Napolina Penne Pasta
  • 250g Napolina Passata
  • 200g fresh mozzarella, cubed
  • 30g Parmesan cheese, grated, plus more for topping
  • 2 garlic cloves, finely chopped
  • 1 medium onion, finely chopped
  • 2 tbsp Napolina Light in Colour Olive Oil
  • Handful fresh basil leaves
  • Salt and pepper to taste
