Christmas Leftovers Baked Macaroni

We all know what’s coming… the mountain of Christmas leftovers staring back at you on Boxing Day. But instead of forcing down another plate of sprouts and turkey, give them a glow‑up with Napolina’s Christmas Leftovers Baked Macaroni. Tossed with chilli & sundried tomato olive oil, creamy mascarpone, and plenty of gooey cheese, this bake turns your leftovers into comfort food you’ll actually be excited to eat.

Method:

  1. In a frying pan over a medium heat add the Napolina Chilli and Sundried Tomato Olive Oil followed by the onions, garlic and thyme and fry until soft then add in the sprouts, Christmas meat, carrots and pigs in blankets and fry for few minutes more to infuse all of the flavours.
  2. Add the Napolina Chopped Tomatoes, mascarpone, Napolina Tomato Puree and season with salt and pepper to your taste then mix together well until everything is incorporated.
  3. Add the cooked Napolina Macaroni and fold together covering all of the pasta in the sauce then top with the mozzarella and parmigiano reggiano and bake in a preheated oven at 200°C for 15 minutes.
  4. Serve up into bowls and enjoy!

Ingredients

  • 1 tbsp Napolina Chilli and Sundried Tomato Olive Oil
  • 2 sprigs of thyme, roughly chopped
  • 100g leftover brussels sprouts, shredded
  • 100g leftover Christmas meat like lamb or turkey, cut into pieces
  • 100g leftover carrots, cut into small slices
  • 4 pigs in blankets, cut into slices
  • 1 medium onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 1 can Napolina Chopped Tomatoes
  • 1 tbsp Napolina Tomato Puree
  • 2 tbsp mascarpone
  • 150g Napolina Macaroni, cooked for 3 minutes less than packet instructions
  • 50g parmigiano reggiano, plus more for serving
  • 1 ball mozzarella, torn into pieces
  • Fresh parsley, for serving
  • Salt and pepper to taste
