Method:
- Bring a large stew pot to a medium-high heat, then add your Napolina Olive Oil. Once hot, add the chicken skin side down and sear on each side until golden brown all over, then remove.
- Reduce the heat to medium, then add the onion, carrot & celery alongside a pinch of salt. Cover and cook for 2 minutes. Remove the lid, then add the rosemary, sage & thyme, then cover and cook for a further 5 minutes.
- Add the Napolina Herbs & Garlic Flavour Booster, then cook for 5 minutes. Deglaze with the red wine and allow to simmer for 8 minutes or until reduced by half. Add the chicken back to the pot alongside the Napolina Passata, water/stock and black olives. Cover and simmer for 15 minutes.
- Remove the lid, season to taste with salt and pepper, then cook for a further 10 minutes. Serve your Chicken Cacciatore with some toasted bread and enjoy!

- 1 brown onion finely diced
- 1 small carrot finely diced
- 1 small stalk of celery finely diced
- 1 rosemary sprig
- 2 thyme sprigs
- 2 sage leaves

- 150ml red wine
- 200ml Napolina Passata
- 200ml water or beef stock
- Handful of black olives
- Salt & black pepper to taste
