This roasted tomato and baked cream cheese Macaroni is delicious and will definitely keep the family happy at dinner time serving a family of 4 for under £10. (Based on prices available from Tesco in August 2024)
Roasted Tomato, Cream Cheese Macaroni

Method:
- In a large pan add the Napolina olive oil, onion, garlic, black olives, oregano, chilli flakes, parsley, Napolina chopped tomatoes and mix together well.
- Then add the cream cheese into the middle of the pan and roast in the oven for 25 mins at 210ºC until the cream cheese has melted.
- In the meantime, cook the Napolina macaroni as detailed on the packaging.
- After roasting, mix the cream cheese into the sauce then add a ladle of pasta water followed by the cooked Napolina Macaroni and fold into the sauce.
- Serve up into four bowls with a little parmesan cheese and a garnish of fresh parsley and enjoy.

- 1 tbsp Napolina Olive Oil
- 1 medium sized onion, finely chopped
- 3 cloves garlic, minced
- 6 anchovies
- 75g black olives, sliced
- 1 tin Napolina chopped tomatoes
- 1 tsp oregano
- 1 tsp mild chilli flakes
- Handful parsley leaves, roughly chopped
- 280g cream cheese
- 300g Napolina macaroni
- 1 ladle of pasta water
