Roasted Tomato, Cream Cheese Macaroni

This roasted tomato and baked cream cheese Macaroni is delicious and will definitely keep the family happy at dinner time serving a family of 4 for under £10. (Based on prices available from Tesco in August 2024)

Method:

  1. In a large pan add the Napolina olive oil, onion, garlic, black olives, oregano, chilli flakes, parsley, Napolina chopped tomatoes and mix together well.
  2. Then add the cream cheese into the middle of the pan and roast in the oven for 25 mins at 210ºC until the cream cheese has melted.
  3. In the meantime, cook the Napolina macaroni as detailed on the packaging.
  4. After roasting, mix the cream cheese into the sauce then add a ladle of pasta water followed by the cooked Napolina Macaroni and fold into the sauce.
  5. Serve up into four bowls with a little parmesan cheese and a garnish of fresh parsley and enjoy.

  • 1 tbsp Napolina Olive Oil
  • 1 medium sized onion, finely chopped
  • 3 cloves garlic, minced
  • 6 anchovies
  • 75g black olives, sliced
  • 1 tin Napolina chopped tomatoes
  • 1 tsp oregano
  • 1 tsp mild chilli flakes
  • Handful parsley leaves, roughly chopped
  • 280g cream cheese
  • 300g Napolina macaroni
  • 1 ladle of pasta water
