Italian Beef Stew

Method:
Roughly chop an onion. Add butter and olive oil to a deep pan and stir together – add the onions and fry for 5 minutes, then add a bay leaf. Roughly chop carrot, celery and add thyme.
Cook over a low heat for 10 minutes stirring occasionally.
Add flour to beef cubes.
Add the beef cubes and cook until browned all over.
Add 150ml of beef stock.
Season with salt and pepper.
Take 1 carton of chopped tomatoes and add to the pan.
Stir in Napolina Double Concentrate Tomato Purée.
Cover and simmer for 2 hours on low heat stirring occasionally.

2 tablespoons Napolina Olive Oil
1 onion, roughly chopped
1 carrot, roughly chopped
1 celery stick, roughly chopped
150ml beef stock
1 x 400g can Napolina Chopped Tomatoes
2 tablespoons Napolina Double Concentrated Tomato Purée
1 bay leaf
1 sprig of thyme
2 tablespoons plain flour
Salt
Black pepper
