Creamy One-Pot Chicken and Spinach Pasta

In a cast iron casserole dish or large frying pan add the olive oil, shallots, garlic, basil, smoked paprika, onion powder, sea salt, black pepper, oregano and tomato puree  and sweat for 5 mins at a medium heat.

Add the chicken and cook for a further 5 mins until the chicken has browned off.

Add the Napolina Chopped Tomatoes, chicken stock and double cream and spinach and mix well.

Add the Napolina Penne Pasta and mix together well, ensuring the pasta has mixed entirely with the sauce.

Sprinkle with parmesan then cover and cook for 45 mins over a medium heat until the pasta has cooked through. (The sauce should be thick and creamy and the pasta should be al dente!)

Serve immediately with a little more parmesan cheese and fresh basil and enjoy!


1 tbsp Napolina Extra Virgin Olive Oil

2 tbsp Napolina Tomato Puree

1 can Napolina Chopped Tomatoes

3 chicken breasts, cut into chunks

4 cloves garlic, finely chopped

2 echalion shallots, finely chopped

15g fresh basil, chopped, plus more for serving

1 tsp smoked paprika

1 tsp onion powder

1 tsp flakey sea salt

1 tsp cracked black pepper

1 tsp oregano

600ml chicken stock

300ml double cream

500g Napolina Penne Pasta

100g spinach leaves

2 tbsp grated parmesan cheese, plus more for serving
