Method:
- To make the dressing, whisk together the Napolina Chilli & Sundried Tomato Flavoured Olive Oil, Dijon mustard, honey and lemon juice in a small bowl. Season to taste with salt and black pepper, then set aside.
- In a large mixing bowl, combine the cooked Napolina Casarecce with the green beans, cherry tomatoes, red onion, black olives, capers, tuna and parsley. Drizzle over the dressing and toss well to ensure everything is evenly coated.
- Divide between bowls and finish with the boiled egg quarters. Serve straight away or chilled for a fresh Italian-inspired lunch.

- 180g Napolina Casarecce, cooked according to pack instructions
- 1 tin tuna in olive oil
- 100g fine green beans, trimmed and cooked
- 2 large eggs, boiled, peeled and quartered
- 150g cherry tomatoes, halved
- 50g pitted black olives
- ½ small red onion, finely sliced
- 1 tbsp capers, drained
- 2 tbsp fresh parsley, roughly chopped
For the dressing:
- 3 tbsp Napolina Chilli & Sundried Tomato Flavoured Olive Oil
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- ½ tsp honey
- Salt and freshly ground black pepper, to taste
