Method:

  1. Bring a large stew pot to a medium-high heat, then add your Napolina Olive Oil. Once hot, add the chicken skin side down and sear on each side until golden brown all over, then remove.
  2. Reduce the heat to medium, then add the onion, carrot & celery alongside a pinch of salt. Cover and cook for 2 minutes. Remove the lid, then add the rosemary, sage & thyme, then cover and cook for a further 5 minutes.
  3. Add the Napolina Herbs & Garlic Flavour Booster, then cook for 5 minutes. Deglaze with the red wine and allow to simmer for 8 minutes or until reduced by half. Add the chicken back to the pot alongside the Napolina Passata, water/stock and black olives. Cover and simmer for 15 minutes.
  4. Remove the lid, season to taste with salt and pepper, then cook for a further 10 minutes. Serve your Chicken Cacciatore with some toasted bread and enjoy!
