Mandy Miller Simmonds‘ spicy sausage pasta is a slow-simmered classic with a fiery twist. With sweet caramelised onions, a splash of red wine, and Napolina’s bold Chilli & Garlic Flavour Booster, this rich tomato sauce wraps around every bite of pasta, perfect for a relaxed, flavour-filled weeknight treat.

Method:
- Heat some olive oil in a pan, add the onions and season with salt and pepper. Cook low and slow until they start to caramelise, then add the garlic. W
- With kitchen scissors, chop the sausages into the pan and stir them into the onion mixture to get a little colour. Be careful not to burn the onions.
- Stir through the Napolina Chilli and Garlic Flavour Booster. Turn the heat to high and pour in the wine, then let it reduce. Add the tin of Napolina Chopped Tomatoes, stir, and simmer on a low heat with the lid on for 45 to 60 minutes. Remove the lid for the last 10 minutes.
- Cook the Napolina Penne Pasta according to the packet instructions. Toss with the sauce and serve. Add grated Parmesan and basil to serve your Spicy Sausage Pasta dish.

- 3-4 small onions, finely chopped
- 5 cloves of garlic, crushed
- 6 good quality lean sausages
- 100ml red wine
- 2 tins of Napolina Chopped Tomatoes, or 800g
- Napolina Passata
- 1 tbsp Napolina’s Chilli and Garlic Flavour Booster
- 400g Napolina Penne Pasta
- Parmesan cheese, grated (optional)
- Salt and pepper
- Basil to serve
