Spiced Lamb and Pecorino Penne

Method:
- Bring a saucepan of water to the boil and add a pinch of salt to season the water
- Into a saucepan on medium heat, add the oil, and then the onions and garlic. Sautee for a few minutes, until fragrant and soft.
- Add in the lamb mince, tomato paste, spices, sea salt flakes, and fresh herbs, mixing well. Add in tomatoes and sugar and simmer for 10 minutes.
- Meanwhile, add the penne to the salted boiling water and boil on a high heat for 10 mins until al dente. Drain, reserving a small ladle of pasta water.
- Add pasta into the sauce, along with the pasta water and half of the pecorino. Mix well. Finish with a sprinkling of the remaining pecorino, some freshly ground black pepper, and a scattering of oregano leaves.

160g Napolina penne
400g Napolina chopped tomatoes
1 tbsp olive oil
Half an onion, diced
2 garlic cloves, crushed
300g lamb mince
1 tsp smoked paprika
½ tsp chilli flakes
½ tsp cumin,
1 tsp fresh oregano, plus more for serving
1 tsp fresh thyme
1 tbsp tomato puree
½ tsp white sugar
2 tsp sea salt flakes
50g grated pecorino, plus more for serving
½ tsp freshly ground black pepper for serving
