Tomato and Basil Soup

Method:

Finely chop 1 large red onion, 2 cloves of garlic, 1 carrot and 1 stick of celery

Heat 2 tablespoons of Napolina Olive Oil in a pan

Add the chopped ingredients and lightly fry for 10 minutes until soft

Add a jar of Napolina Passata

Take 500ml vegetable stock and add to the pan with salt and black pepper

Simmer for 20 minutes

Chop a handful of basil leaves and add to the soup, stirring well

Remove from the heat and blend until smooth

 

Serve with a basil leaf and crusty bread

1x 690g Jar Napolina Passata

Handful of basil leaves

2 cloves garlic, crushed and finely chopped

1 large red onion, finely chopped

1 stick celery, finely chopped

1 carrot, finely chopped

2 tablespoons Napolina Olive Oil

500ml vegetable stock

Salt and black pepper
