Creamy Prosciutto & Pistachio Penne

Method:

  1. In a large saucepan add the Napolina olive oil, garlic, onion, basil and parsley and sweat on a medium heat for a few minutes until softened.
  2. Next add in the prosciutto and cook for a further 2 mins.
  3. Pour in the cream, chopped pistachios, salt, pepper and white wine and mix together well for 10 mins on a medium to low heat until the sauce thickens and becomes creamy.
  4. Cook the Napolina penne pasta as per the packet instructions then drain keeping a ladle of pasta water.
  5. Add the Napolina penne pasta to the sauce followed by the pasta water and mix together well. As it starts to thicken add the parmesan cheese and give it one last mix until the cheese has melted into the sauce and the pasta is completely covered.
  6. Serve up into four bowls, sprinkle a little extra parmesan and enjoy!

Ingredients

2 tbsp Napolina olive oil

4 cloves garlic, finely chopped

1 large white onion, finely chopped

200g prosciutto (or speck if it is available in stores near you)

15g fresh basil, roughly chopped

5g fresh parsley, roughly chopped

200ml single cream

150ml white wine

100g shelled pistachios, finely chopped, plus more for serving

100g parmesan cheese, grated, plus more for serving

2 tsp sea salt flakes (to taste)

1 tsp black pepper (to taste)

400g Napolina penne pasta
