Our Macaroni Cheese recipe is a warming and indulgent treat, with Napolina’s signature pasta at the heart of the dish. Simple yet delicious, this mac and cheese is easy to prepare and baked to perfection in no time.
Serves 4 40 minutes
300g Napolina Penne or Macaroni pasta
2 tablespoons Napolina Light in colour Olive Oil
1 large onion, finely chopped
2 cloves garlic, finely chopped
150ml double cream
175g Cheddar cheese, grated
2x 125g mozzarella balls, torn into chunks
Handful parsley leaves, finely chopped
50g Parmesan cheese, grated
Salt and black pepper
Preheat the oven to 200°C
Cook 300g Penne in boiling, salted water until al dente.
Meanwhile, finely chop an onion, two cloves of garlic and a handful of parsley leaves. Heat 2 tablespoons light in colour olive oil in a pan and add the onion and garlic, lightly frying for 10 minutes until softened.
Drain the cooked pasta and add to the onion and garlic, before pouring in 150ml double cream, 175g grated cheddar cheese and 2 mozzarella balls torn into chunks. Mix the ingredients together over a low heat and season with salt and pepper for 2 minutes.
Pour the mixture into an ovenproof dish and top with the grated Parmesan.
Bake in the oven for 20 minutes until bubbling and golden.
